Mindo is a unique bean to bar company with facilities in Mindo, Ecuador and Dexter, Michigan. We have been lucky enough to visit their Michigan spot learn to more about their operation and see their chocolate making process in action!
Mindo works with a group of small organic farmers about 30 miles outside of their Ecuador facility who harvest the Nacional variety of cacao beans. This is an heirloom variety that produces a complex flavor profile and comes from trees that have been in the families of the farmers for multiple generations. Because these cacao trees are native varietals, they are able to thrive amongst other trees and plants that work harmoniously to provide a habitat for pollinators and many species of animals. This is the opposite of the trend in mass cacao production, which contributes to deforestation.
By paying their farmers two to three times more than the fair trade price for cacao, Mindo is able to encourage farmers to continue to harvest smaller heirloom crops rather than plant the newer hybrid models which produce much higher volume.
Mindo uses thoughtful processes from the time the cacao is harvested to the final bar, including sourcing traceable and clean ingredients for any additional items going into their bars.
Their rustic collection is a more traditional stone ground style of chocolate containing ingredients that were typically added to chocolate by Mayans and Aztecs. We stock the vanilla and cinnamon from this line and both have been customer favorites!
