One line sticks out from our first conversation with mother and son team, Sarah and Tyler: "Bees don't tell you where they fly." We had posed the topic of "organic" honey from places like Brazil, popping up more frequently on grocery store shelves. Their quick response was another reminder of the food marketing system we are constantly subjected to and the misleading information that could result in a consumer choosing faraway honey over a local honey full of enzymes, minerals and antibodies.
In fact, a majority of honey found in stores today is a combination of honey from several countries and countless beekeepers within that country. This leaves little to be known on the quality of the raw product or the processes involved in getting it from hive to jar.
What impressed us so much about these 3rd and 4th generation beekeepers is their obvious passion for the health of their bees, the purity of their honey and the sustainability of their efforts.
Avocado Honey tends to be farker and reminiscent of molasses but with incredible buttery notes. We love this one in dressings as it adds unique character and depth to any meal. We also use it in skincare, as the rich enzymes help achieve that honey glow!
Pozo Wildflower offers fruit forward notes with a distinct texture from crystallization that gives it crunch when spread on toast!
