Not only does Chacewater Balsamic Vinegar start with clean and organic grapes, but the end product is pure. Many of the balsamic vinegars on the market contain color additives, thickeners or sugars and the industry is rife with fraud. After talking with industry experts on some of these issues, we have chosen balsamic as an item we will only consume if we know its origin.
Chacewater Balsamic is naturally fermented in wooden vats and aged for 5 years. It's the process itself that develops the vinegar rather than any artificial additives or processes.
We found Chacewater by chance during a trip to Kelseyville CA. It was incredible to find their beautiful wine and olive oil tasting room alongside their olive groves, production facility and offices. We did a tasting, walked straight into the office and left with a couple of cases of olive oil and balsamic vinegar.
